Clean Eating Healthy Peanut Butter Cups | Recipe

Healthy Clean Eating Peanut Butter Cups
Healthy Clean Eating Peanut Butter Cups

I have a soft spot for Reese's Peanut Butter Cups and could easily devour a packet in 0.87 seconds flat. And whilst a little indulgence is never a bad thing, it's even better to be able to indulge without that lingering feeling of guilt. Which is why I'm pretty excited to share these healthy Peanut Butter Cups with you!

I followed Dashing Dish's recipe to create these truly delicious yet clean Cups. They are the perfect little treat to curb that sweet craving. The original recipe states that it makes 14 mini peanut butter cups. Though, I was a little bit naughtier and instead made 7 standard-sized peanut butter cups (using silicone muffin cases).

The recipe is really simple to follow and can be created using ingredients that you hopefully have lying around the kitchen already! And then before you know it, you can get all wrapped up in a blanket and enjoy a guilt-free sweet treat whilst watching a festive movie!

Chocolate Layer:
1/4 cup- Unsweetened Almond Milk (I used skim milk instead, so either should be fine!)
1/4 cup- Plain Low Fat Greek yoghurt
1/4 cup- Unsweetened Cocoa Powder
2 tbs- Protein Powder (I used choco-nut flavour, but if you don't have any just add extra cocoa)
1 tbs- Stevia (or if you want it sweeter, add a dash more)
Pinch - Salt

Peanut Butter Layer:
1/4 cup- Peanut flour (such as PPB...if you don't have any you can substitute it with normal peanut butter)
1/4 cup- Water
1 tbs- Stevia
Pinch- Salt

To make these tasty treats, it's as simple as throwing the ingredients for the chocolate layer into a bowl and mixing until it's smoothly combined. In a separate bowl, do the exact same for the peanut butter layer!

After mixing, pour 1 tsp of the chocolate layer into each silicone muffin liner. Next, comes the peanut butter layer. Again, this is made by adding 1tsp of the peanut butter mixture to each silicone muffin liner. Finish off with an extra layer of the chocolate. Once, they are all filled with chocolate and peanut-y goodness, pop them in the freezer for 1-2 hours.

(nb. they must be kept and stored in the freezer...but when you are ready for one just pop it out of the freezer, leave it to defrost for a few minutes, then enjoy!)

These are seriously tasty treats. A wonderful alternative to Reese's! A nutritional guide for these can be found on the original post over at Dashing Dish. Though, bear in mind that the nutritional value will be doubled if you create larger peanut butter cups (as I did)..and if you use peanut butter instead of peanut flour, this will also change the values.

If you haven't had peanut flour before, I definitely recommend it. It's a healthier alternative to peanut butter yet just as tasty! Peanut flour is still quite rare to come across in the UK but I have seen it on the shelves of Holland and Barrett's and Win Naturally. PPB is great because it has the same taste as peanut butter but with a higher protein content and much less fat! Though, it is more expensive than plain old normal PB.

I hope you enjoy the recipe, let me know if you decide to make these!
