I'm guessing at least 80% of you have just read the title and thought to yourself "Yuck! Sweet Potato and Nutella Brownies, this girl must be delusional?!". But, trust me when I say that these are super-duper yummy. Give these a try and you're bound to be forever kicking yourself for your initial "yuck" and grimace at such a combination.
When it comes to eating healthy, you don't have to stick to eating boring, bland foods. In fact, you can use it as an opportunity to get creative in the kitchen. Unleash your inner Heaston Blumenthal and act all crazy scientist by cooking up a storm! As I've mentioned oh so many times before, I love to eat healthy but I also have a sweet tooth that I just can't say no to. So, I add a healthy twist to sweet treats, so you can indulge without feeling guilty!
Two of my favourite foods in the whole wide world are: sweet potato and nutella. So, it's inevitable that I whip up a recipe that contains them both! Sweet potato is great for using in sweet recipes - I mean, it is in the name after all! If you're only using your sweet potatoes for making fries, mash or soup then you NEED this recipe. It will open your eyes to the world of possibilities with sweet potato!
Anyway, let's get on to the recipe:
To make these super easy and extra tasty brownies you will need:
1 large oven roasted Sweet Potato
1 scoop vanilla protein powder
2 tbsp. coconut flour
2 eggs
1/2 tsp baking powder
2 tbsp. nutella (and some extra for drizzling over the top later!)
When cooked, these brownies have a delicious fudgy texture and they taste so sweet. All you need is a tiny slice to satify those sweet cravings. Well, that's if you can resist the temptation to eat the whole thing! I also added some dried banana chips to mine and a few chopped hazelnuts...so feel free to throw some extra goodies into your brownies to make them even more irresistible!
Oh and excuse my poorly shot photos. I had to snap photos in 0.7 seconds before my Mother dove in and devoured some of the brownies...so they aren't the most beautiful looking, but it's what's on the inside that counts, right?

Then roughly chop it up (I left the skin out and just scooped out the fluffy insides!).
Throw all of your ingredients, apart from the Nutella, into a blender.
Blend until smooth - it should have the texture of cake batter!
Pour the mixture into a small brownie tray (I used a small silicone loaf tray, which was the perfect size!)
Then melt the nutella and fork through the mixture, creating a lovely marbled effect.
Pop in the oven for 40 minutes at 180Âșc or until a inserted knife comes out clean.
Once ready, pop the kettle on and then tuck into your fudgy, tasty brownies with a big cup of tea :)!
