Pizza. Even the word alone makes me drool. I'd probably say it's one of my favourite foods. But when you're being good and eating clean that usually means no pizza allowed. Imagine never being allowed to eat pizza. That sounds like a living nightmare. With my love for pizza and my love for fitness, I was not going to let that happen. So fear not, I've found a way around the no pizza rule. Now, you can eat pizza and still be super healthy! It's low carb, low fat, high protein and veggie-powered. It's basically a super-pizza and a recipe that you simply must try.
Ingredients:
1/2 fresh Cauliflower head
1/2 reduced fat Mozzarella ball
1 tbsp. pizza sauce (or have a go at making your own!)
1 medium egg
Directions:
Using a grater, grate the cauliflower into a large bowl until you're left with a bowl of fine cauliflower pieces that resembles a fluffy cous-cous texture.
Then, put your muscles to good use and squeeze out any moisture from the cauliflower. I did this by wrapping the cauliflower pieces in a (clean) tea towel, first. It's important to squeeze out as much excess water as possible...otherwise you may end up with a soggy pizza base!
Next, gently whisk the egg and mix this in with the cauliflower. Then, take 1/2 of the mozzarella and squeeze out any excess water. Once you've done this, crumble this mozzarella into the egg and cauliflower mixture. Add a pinch of salt, pepper or any of seasoning of your fancy.
Once combined, flatten the cauliflower dough onto a suitable pre-lined baking tray. You should be able to get a 10 or 12-inch pizza, depending on how thick you make it.
Pop the cauliflower dough into the oven at 180°c and bake for approx. 15-20 minutes (or until golden)
Once the base is done, it's time to add the toppings! Evenly spread 1 tbsp. of pizza sauce onto the base. Then top with the other half of the mozzarella. Now, you can get creative and add toppings of your choice! For my pizza, I added mushroom, spinach, chicken and also added chopped tomatoes on one half.
Pop this back into the oven for a further 10 minutes and voila, your pizza is ready to feast upon!
Honestly, since discovering cauliflower crust pizza, I'm no longer stuffing my face with takeaway greasy pizza on cheat days. Gone are the days of buying a 16" inch pizza from the takeaway (yes, this did happen) then proceeding to feel guilty and ridiculously sick as I watch my abs disappear under a pizza-food baby. I definitely do not miss those moments of weakness! Now, I can enjoy my non-greasy but super tasty pizza and then do a little happy dance knowing that it still fits my daily macros and I can still see abs.
