To make these pancakes, you'll need:
1 banana
2 eggs
75g cottage cheese
1 scoop vanilla protein powder
1 tbsp. rolled oats
1 tbsp. coconut flour (or an extra tbsp. of oats if you don't have coconut flour!)
Slice up the banana, crack the eggs and throw all of the ingredients into a blender and blend until the pancake mix is smooth.
Now that your pancake mix is ready, just heat up a non-stick frying pan and add a touch of coconut oil (or low calorie spray). Once the pan is hot hot hot you can start adding the mix and get making some pancakes!
These pancakes tend to be a little more dense than your average crepe so flip-ability (that's a word right?) it's the best. But they can be easily flipped with a spatula and the end result is a fluffy delicate yet dense tasty banana and vanilla pancake!
As for size, you can make these as big or small as your heart desires. I kept my pancakes on the smaller size - just slightly bigger than a coffee cup's rim. That way, I could stack them up high and pour melted nutella and sprinkles alllll over them and eat til my heart was content. I'm a greedy guts so when making mine, I actually doubled the recipe. But you get a LOT out of the mix. I probably made a grand total of 20 small-ish pancakes and had just under half of the mix left...which my sister stole and took back home with her.
Top these pancakes without favourite goodies and eat until your heart burst with happiness.
I'll add the nutritional information too but right now the app I use is experiencing technical difficulties and counting isn't my strong point haha. But as soon as it's up and running...expect to see nutritional values and to be grinning like a Cheshire cat when you see how healthy these pancakes are!
